The menu

——Reception——

G.H. Mumm Cordon Rouge, NV

——First ——

Dakota Shy, 2020 McKenna’s Sauvignon Blanc, Napa, California

Shows bright, beautiful aromas of citrus, mineral, oyster shell and herbs. Those aromas translate to the palate where the focused, complex flavors reveal grilled thyme, Meyer lemon and mineral flavors all buoyed by a lush texture that finishes racy and refreshing. This brings you back for sip after sip – delicious.

100% Sauvignon Blanc | 6 months 10% New French Oak, 80% Neutral French Oak, 10% Stainless Steel | 300 cases produced

Paired with: Foie Gras Chestnut & honey, tempura apple, cassis purée, brioche toast

——Second——

Dakota Shy, 2018 TEN Cabernet Sauvignon, Napa, California
Very expressive of our valley floor Cabernet Sauvignon vineyards, this wine has beautiful aromatics of dried herbs, rose petals, black currant, cherries and anise. Super silky and smooth on the palate, the lush textured core reveals layers of currant, cherry and licorice notes. This all flows seamlessly into a long, bright and energetic finish where the flavors echo. Probably the most approachable 2018 at this point but has a long life ahead.

95% Cabernet Sauvignon, 5% Cabernet Franc | 18 months in barrel, 70% New French Oak | 500 Cases Produced

Paired with: Duck Leg Green lentils curry, pork pastrami, grilled leeks

——THIRD——

Dakota Shy, 2018 Cabernet Sauvignon, Napa, California
Very classic and compelling Cabernet. The aromas show purposeful and elegant restraint – cedar, tobacco leaf, lavender, currant and dark cherry and earth. In the mouth, this shows a classic, powerful Napa Valley Cabernet with broad fine-grained tannins providing a seamless and finely-filigreed structure and precise balancing acidity. Finishes beautifully with flavors of dried herb, black currant, cedar and cocoa powder that linger. This is a wine that charms with its combination of class, elegance and sumptuousness.

96% Cabernet Sauvignon, 4% Cabernet Franc | 18 months in barrel, 70% New French Oak

Paired with: Dry Aged 44 Farms Pot Roast Potato gnocchi, aged cheddar cream, chives, black truffles

——FOURTH——

Dakota Shy, 2018 Social Currency, Cabernet Sauvignon, Napa, California
Displays a totally sensuous range of aromas – dense black cherry, chocolate, stone and licorice. On the palate this is powerful and incredibly flavorful with an exquisitely framed, lusciously-textured core. Delicious, powerful, rich, detailed and multi-layered this stays true to Social Currency’s sophisticated hedonism. Incredible depth, persistence and balance with silken tannin structure. This is a wine for cellaring will even more exceptional with cellaring – but that will be a challenge given how delicious it is young.

100% Cabernet Sauvignon | 18 months

Paired with: Almond Tart Roquefort, cranberries

Dakota Shy

Dakota Shy grew out of the passion that friends and colleagues, Todd Newman and Tom Garrett, have for the wines, history and vineyards of Napa Valley. Their goal is to craft wines of substance that rival the best of what Napa Valley has to offer.

After years of working together at Revana Family Vineyard, under the tutelage of Napa Valley winemaking legends Heidi Barrett and Thomas Brown, and vineyard manager Jim Barbour, these two friends set out with a determination to create a world-class estate of their own.

They began by sourcing Cabernet Sauvignon grapes from a range of great vineyards throughout Napa Valley. These vineyards represent the arch of grape growing history in the valley from old, trusted sources to new, highly regarded plantings. Produced in limited quantities, their handcrafted Cabernets reflect the highest expression of the vintage.
