Jarvis Wine Dinner

This is a rare opportunity to taste these wines, which are not available retail, They are primarily directly available from the winery or served in very select restaurants. The Jarvis production is very small, and they are one of very few wineries that are 100% estate grown. Located in Napa, California, in the beautifully rugged mountains between Mt. George and Milliken Canyon at the southeastern end of the Napa Valley. All the wines are produced and aged in the Jarvis stone cave. The vineyards are planted in gently sloping meadows one thousand feet above the valley floor. As the cool maritime air passes over the Carneros flats and begins flowing into the valley, it falls about seven degrees in temperature for the thousand feet of vertical rise. As such, their vineyards tend to be cooler by several degrees than the famous Carneros region. These cooler temperatures allow a long “hang time,” which permits a long, slow fruit maturation for maximum flavor and concentration at harvest.

  1. Jarvis Estate Chardonnay 2019
    Full malolactic fermentation. Showing vibrant golden yellow color and sumptuous aromas of ripe pear, blossom, and crème brûlée. The wine is aged sur lie for twelve months in new French Burgundy oak barrels, creating a bold texture that bursts with flavors of apple and baking spices. The opulence of the wine is balanced by bright acidity, resulting in a richly layered Chardonnay with a complex and powerful finish.
    Paired with Spring Pea Velouté Lobster raviolo, burrata cream, tarragon

  2. Jarvis Cabernet Sauvignon, 2016
    Aged 27 months in new French Oak. Cabernet Sauvignon is the flagship wine. Elegantly nuanced with a velvety texture, this opulent vintage is abounding with flavor. Round and refined with polished tannins and complexity, the palate is delighted as the wine makes its way to an incredibly long ­finish.
    Paired with Tomato Portuguese Rice Dry aged Rohan duck, cured olives, chorizo pata negra

  3. Jarvis Lake William Red Blend, 2016
    Aged 25 months in new French Oak. Considered a "fortunate accident," William Jarvis during midnight pump-overs accidentally pumped a third of a tank of Cabernet Franc into a tank of Cabernet Sauvignon. Each facet combines to provide a harmonic balance of freshness and energy. Deep impactful color and ‑oral on the nose, elegant black fruit, smoke and wet stone are delicately woven alongside a sophisticated acidity across the palate. The density of fruit provides generous weight that leads to balanced tannin and a distinguished, vibrant ­finish.

  4. Jarvis Merlot, 2018
    Aged 21 months in new French Oak. A vibrant expression from an exceptional vintage, our 2018 Merlot showcases a stunning dark crimson color. On the nose, the Merlot opens with aromatics of dark cherry and chocolate that blend with earthy tones, graphite, and black tea. The dark cherry core continues the palate, complemented by dark fruit flavors and a velvety texture. The wine demonstrates an elegant balance between soft tannin and bright acid, with lingering chocolate notes on the lengthy finish.
    Paired with Chocolate Fondant Dates, pistachios, goat cheese, blackberry compote
