The unexpected bite of ruby red grapefruit rang out against the dusky flavors of 7-spiced short rib at Fielding's Local Kitchen & Bar on a recent night. The Texas citrus skittered around the herbal edge of chimichurri sauce and boosted the earthy beef, which had been simmered sous-vide for two days straight, so that it collapsed into melting shreds at the nudge of a fork. Alison Cook's top new restaurants of 2015

This lovingly designed contemporary space is a wonderful addition to The Woodlands' dining scene. Restaurateur Cary Attar and his chef, Edelberto Goncalves, have built on their success with Fielding's Wood Grill with a more ambitious menu, and they're even dry-aging their own steaks in-house, with glorious results. (Ask for the steaks a la carte.) Good local ingredients and Goncalves' French training shine in such simple, immaculate dishes as pan-roasted chicken with butternut squash in a mustard pan sauce that sings; or an airy, crisp pizza topped Alsatian tarte-flambé-style, with thick-cut bacon cubes, caramelized onion, crème fraîche and melted leeks. Come Monday, folks in The Woodlands have a new reason to dine out. The team behind popular local burger joint, Fielding's Wood Grill, has branched out with their second concept, Fielding's Local Kitchen + Bar. Rather than all-American comfort food, the expansive 4,500-sq.-ft. restaurant shines a spotlight on European fare with Mediterranean accents, alongside meats that are dry-aged in house. The well-lit space boasts a full bar pouring wine and an ever-changing list of 20 craft beers on tap. Read more.
